The knife is incredibly sharp and the quality is excellent. The handle feels very comfortable in my hand, and the weight is perfectly balanced. I enjoy using it so much that it has quickly become my favorite knife to cook with.
Early on, after we discovered my wife suffered from celiac disease, we upgraded our knives to Cutco, knowing we would be eating at home quite often. We thought we had good knives, but then we used Guilfoyle's knife for the last 2 months. Wow what a difference it is as sharp as the day we first used it. Now, we would instead go through the hassle of cleaning this one Guilfoyle knife than get an already clean Cuctco knife when preparing our meals

I'm a full time chef and, while I prefer heavier knives, this blade is absolutely fantastic for work and play. I've been using it for about a month now and am very satisfied with with how keen the edge has stayed with repeat use and zero maintenance! From easy cuts into the flesh of tomatoes, to harder jobs on fabricating bone-in meats, this knife has served me well. I'm not shy to say that I've retired this to my home knife block for daily use to reduce the wear and tear from commercial cooking as I want to ensure it serves me for many years to come. The fiberglass handle feels natural to grip regardless of the task at hand and the German steel is flexible and springy enough to use for most situations. The design is quaint and tasteful, mirroring the high quality and well made product that it is. I would recommend this knife to professional and home cooks alike of any skill level as a incredibly solid tool to carry for everyday use.

Becareful it's sharp. I accidentally cut through my kitchen towel with the point.
